Honey-Glazed Berbere Wings

These crispy oven-baked wings are coated in a sticky honey Berbere glaze that balances sweet heat with the warm, deeply savory flavors of Ethiopia’s iconic spice blend.
Ingredients
Dry Rub

2 lbs chicken wings

1 Tbsp aluminum-free baking powder

1½ tsp kosher salt

1½ Tbsp Berbere
-
1 tsp Purple Stripe Garlic Powder
-
½ tsp Smoked Pimentón Paprika
-
½ tsp Zanzibar Black Peppercorns
Honey Berbere Glaze
-
¾ cup honey
-
2 Tbsp apple cider vinegar
-
2 Tbsp Berbere
-
1 Tbsp soy sauce
-
2 Tbsp butter
-
2 tsp Purple Striped Garlic
Finish

Optional: Sesame Seeds
-
Optional: Chives or Cilantro
Directions
Bake the Wings
Pat wings very dry with paper towels.
In a large bowl, whisk together all the ingredients in the dry rub, then add your wings and toss until coated.
Cover a large sheet pan with parchment paper and arrange wings spaced evenly apart.
Let sit for 30 minutes to one hour if you have the time.
Preheat oven to 425°F
Bake the wings for 50 minutes, tossing halfway through
Make the Honey-Berbere Glaze
When the wings are almost done baking, add all the ingredients for the glaze in a small pot over medium heat. Whisk to combine and cook for 2-3 minutes until glossy.
Finish
Toss the wings in the glaze until coated — you may have some extra sauce which you can drizzle on top at the end.
Return to the oven for 3–5 minutes if you want the glaze extra sticky and caramelized. Or broil the wings under low heat for 1 minute but keep a close eye on it!
Optional: Finish with sesame seeds and chives or cilantro.
